mmmmmmmm...nom nom nom

alright ladies, this recipe is a little more complex than you might be used to.
you are going to make 2 different things, cut some stuff up, 
then put it together into a third new thing: Pesto Margherita Pizza

now please understand two things before getting deep into this recipe post.
1. you must have a food processor to make the pesto. a blender will not work.
2. all of these photos are blurry.. I apologize. I wouldn't even show you them,
however, this is the best food I have ever made! so damn delicious.

Pesto Margherita Pizza

 

what you need:

 

pesto:

1 tbs. chopped garlic
2 cups fresh basil leaves [packed]
1/2 tsp. kosher salt
1/2 tsp. freshly ground pepper
1 cup extra virgin olive oil
1 cup freshly grated parmesan cheese
 

pizza:

pizza dough [I used the Jiffy boxed pizza dough, made per instructions]
1.5 cups pesto [you can always buy premade pesto]
2 large balls fresh mozzarella [sliced]
2 medium tomatoes [sliced]

now make it:

 

pesto: 

 


1. place basil into food processor.  pulse 4 times.
2. add garlic, salt, and pepper.  pulse 4 times.
3. with the food processor running, slowly pour the olive oil through the feeding tube. 
continue processing until pesto is thoroughly pureed.
4. add parmesan cheese, and puree for 1 minute.


pizza:

 


1. use the pesto as a pizza sauce substitute. spread in an even layer over top of the pizza dough.
2. layer mozzarella and tomatoes over pesto.
3. bake on a pizza stone, pizza pan, or baking sheet at 450 degrees for 12-15 minutes.

we honestly didn't expect it to really work out.
but this is a recipe that had to be shared. 
this is the best pizza I have had in quite awhile!

a lady in the street...

I sometimes wonder if I have any men reading this blog,
today is one of those days where, if I do have mean reading..
I must apologize to them for what I am about to post.
I am sorry that you are about to be either annoyed, disturbed,
or just plain not care about what I am about to rant.

now that apologizing has been taken care of, let's get down to business.

 

Ticked Off Tuesday - Lady Edition


  1. hair.  I absolutely hate that being pretty [or even presentable] requires a shower, blow dry, and straightener.  don't even get me started on the abundance of hair products it requires to get my nappy head looking acceptable!
  2. clothes. we can't just buy what we think is cute and wear it. we are all competing with each other so that somebody has to feel gross in whatever they love to wear. I love floral prints [like a grandma's couch] and up until recently this was so not okay. and on another note, why does everything cost so much?? I just bought the smallest pairs of underwear ever and they were 5 for $26. don't think I didn't notice Victoria! you raised that price a dollar you whore.
  3. shaving/waxing. never. ending. battle.
  4. "that time of the month". gross and horrible. I like to think that our insane mood swings during this time are payback to men for having it so damn easy. I also hate all of the dumb ass names we create for it.
  5. commercials for women.  diet pills, tampons, yogurt, cereal. nobody acts the way that these idiots portray us in these commercials. I don't dance but I still need tampons! I don't need to see a rainbow of yogurt to make my purchase. you are not convincing me with some skinny bitch to buy gross cereal. I really dislike commercials.
  6. "you can't do that, you are a girl".  ugh! if you can fart and burp like a disgusting individual at all times, saying I am a girl does not mean that I can't! [I won't.. usually because ew.] sometimes we all have to 'release the crackin' do we not? don't cause a scene because I have a vagina!
wow.. those came really easy to me..
I guess I have had a lot of pent up frustration.
I think we should all pretend #6 never happened.
I must leave you now, because I have to go grocery shop.

my laid back weekend

first of all, welcome to the 30 new followers I have since last week!
I hope that you will stick around for awhile and get to know me better.

this past weekend was incredibly laid back, so this post will be brief.


Friday was a pleasant surprise. I woke up to a blizzard right outside my window.
since being laid off, my tolerance for inclement weather has definitely multiplied.
currently snow is my favorite thing.  if we have to deal with winter temperatures,
I would much rather do it with a nice dusting [or feet] of fresh snow.

Saturday I spent the beginning of the day with Catherine [my half sister] who is six,
my mother and grandmother were also there.  we were on the bra hunt.
do you hate bra shopping as much as I do? they measure you, they tell you what you need,
yet absolutely nothing fits. by the early afternoon my boobs hurt and I wanted a nap. 

we also had "family dinner" at my house Saturday night. spaghetti and garlic bread.
simple and cheap for eight people. too many people if you ask me!
Kalie had to be locked in the kitchen while the little kids ate.. she's a bit of a thief.
her prisoner look was so cute though, that I didn't feel as bad about it.

Sunday... ugh.  I sat in front of my computer from 11AM until 7:30PM
[minus a quick Starbucks trip of course] and I wasn't doing anything enjoyable!
homework all. day. long. I hate accounting so much... I have no idea why I am getting an MBA
I promise you that I will never use it, at least not by choice.

I also got a lengthy email from Erin @ Living in Yellow
she had some really great ideas for revamping my sidebar.

cha cha cha - ole'

I should really make a button or at least an image for these posts...
there is probably a lot I should do so lets not focus on that.
this week I made something that I love: Pico de Gallo
otherwise known as Authentic Mexican Salsa or delicious.
I absolutely love tomatoes, spicy food, and anything easy.
hopefully, you also enjoy the same things and you'll like this recipe.

Pico de Gallo [authentic mexican salsa]


what you need:

3 large tomatoes
1 medium onion
1/4 bunch of cilantro [I used less because I don't really like it that much, add as much as you like]
1/2 of a lemon for juicing
1 clove of garlic
2 jalapenos [I used three because I like it spicy, use as much as you like]

 

now make it:

1. wash all of your ingredients.  
I like to use a fruit and veggie wash because many pesticides [and other "outdoor things" don't come off with water alone.
2. dice tomatoes, onion, and jalapeno. mice garlic and chop cilantro.
3. put all of your ingredients into a bowl adding the juice from half of a lemon.
4. mix well and serve!


I made some tasty quesadillas to go with mine, but before they were done I also ate it with some tortilla chips.  this dish is very versatile and yummy with all sorts of different things.  you could put it on top of chicken, fish, or steak.  you could put it in an omelet or scrambled eggs. seriously guys, this shiz is good, and its only like 22 calories per serving [this recipe has 8 servings]. hell, eat the whole bowl for 176 calories!

Hey, hey, hey this IS my real hair readers! I'm Andrea & I blog over at Love is...


That guy up there is my husband, Michael. 
And in putting together this post, I realized I have zero pictures of me by myself, 
where I don't look like a complete goon, to use in a guest post. I should probably work on that. 
So that's why you get to see his mug. Although, it's a pretty cute one, so I wouldn't mind if I were you.

Anywho, a few weeks ago, Amanda hit me about about doing a guest post & of course I said yes. 
I mean this girl is hilarious & if you're here, then you're hilarious too & I want to be your friend. 
And then came deciding what to blog about. And I figured since I'm a new sponsor around these parts, 
I'd do a simple get to know me post. Also known as, I got nothing else. Here we go!

I'm a born & raised Minnesotan. 
And although I sometimes pretty much always, end up hating winter every year, 
I couldn't imagine living anywhere else. 


Like I said, I'm married to that guy up there, Michael, who just also happens to be my best friend. 
Yeah, we're kinda mushy like that sometimes. I'm especially lucky that he's my best friend, 
because we just recently up & moved away from everyone & everything we've ever known, for his job. 
We're only a few hours away from everyone, but it's still quite the change & something we're adjusting to. 
But, we're having fun exploring our new surroundings & finding our new normal.


I work full time in a very glamours cubicle job, but I'm also a part time wedding planner, 
which sounds really strange, by the way. After planning our September 2011 wedding, I realized it was something I really enjoyed doing, but never thought I would be able to do it for a job. Turns out I was wrong! A friend introduced me to her wedding planner & the rest was history. Actually the rest is a really long, drawn out story that's really boring, so I'll skip that & just get to the fun part... I'm now blogging for the company & also planning weddings & have my first lead event this July!


I'm an avid outdoors women & I love to bowhunt, fly fish & do other outdoorsy stuff with Michael.


And sometimes, he fly fishes & I read my book. It works for us. = )

drop it like a squat

so original I know, but can we all agree, squats are used for torture.
it is Tuesday again and I have actually done pretty much nothing...
three day weekend anyone? if Aaron is around I cannot be productive.
wow, ADD but oh my gosh! today is my 150th post!!

yesterday, as many of you already know, I took Kalie to the vet.
it turns out that she has a sprained tail. 
what does this mean to me? it means I have to babysit her.
no running, no excitement, no wagging, no being herself basically.
yeah. right. I think we can all imagine how that is going to play out.
so far, it's totally going great.... at least she loves taking medicine.

anywho, lets get on with today's post!

let's talk about my amazing valentines day shall we?
normally I am not a valentines day person..
and I know, typically only single people say that,
however, I haven't been single since I can even remember.
I just think it is silly and fake. but this year was very different.

Breanna and I had a best friend's Valentines Day.
we went shopping, we had dinner, and best of all...
we went to the Maroon 5 concert [featuring Neon Trees!]
sigh.. this day will be extremely hard to live up to!
there are really no words to describe how amazing it was,

a taste on Thursday

hello again, I hope you have been on the edge of your seat waiting for this.
the time has finally come, the time, for another recipe. and this weeks is good.
it is very good. I made it very simple, but it would be even better with a protein.
remember that, okay? I'm thinking shrimp would make it the best...
if somebody tries that, please let me know. I would be very interested.

this weeks recipe is: Creamy Garlic Pasta

[you may have seen similar recipes on Pinterst, however, I don't really follow directions so this probably won't look or taste the same]

Ingredients:
2 [ish] tsp. Extra Virgin Olive Oil
6 cloves of Garlic - minced
2 tbsp. Butter - I used "I Can't Believe It's Not Butter" and everything turned out okay
1/4 tsp. Salt
1/2 tsp. Pepper
3 cups Chicken Stock - I used organic/free range stock, read the labels while at the store. you will not believe the stuff that is in there.
1/2 lb Angel Hair Pasta
1 cup Grated Parmesan Cheese
3/4 cup Fat Free Half & Half
2 [ish] tbsp. Fresh Chopped Parsley
Directions:
In a pot** heat olive oil over medium-low heat for 1-2 minutes.  Add garlic, stirring occasionally, cook until tender (approximately 1-2 minutes).  Do not allow garlic to brown, if garlic browns, discard and begin again.
When garlic is tender add in butter and stir until fully melted.  Once melted, add salt, pepper, and chicken stock. Raise heat to high and bring to a boil.

Once at a full boil, add pasta and cook per box directions.  When pasta is fully cooked, reduce to medium heat and mix in parmesan cheese until completely melted.
Remove from heat, stir in half&half and parsley.  Sauce may be thin at first.  Let sit, covered, for 5 minutes.
Then enjoy!

**choose a pot large enough for all ingredients to fit into.

so guys, I have a special for you today. two posts! yep, I am back to my old ways.
as it is Valentine's day, I thought I would participate in this fun little link up.
don't get worried or excited, Aaron and I aren't too mushy in public.

it was vodka sauce.  I guess it was far too fancy for his liking!

leaving clothes right next to the hamper, like why. why can you not just put them in the damn hamper?!

all of it. haha I don't know what he will actually say.  he complains all the time about something!

review numero dose

Can I be honest? I sure hope so, since this is a blog.
I didn't really want to do this post today..
and the reason for that is because I've had a real lazy month.
I don't think I have done anything at all on this list.
let's find out for sure, shall we?
  1. be in NYC at midnight on New Years Eve - COMPLETED
  2. visit California 
  3. visit 20 of the 50 United States - 15 states down, 5 to go!
  4. finish my portfolio for grad school 
  5. be accepted into the Masters in Architecture program
  6. finish all 3 studio courses for my graduate degree
  7. lose 50lbs - last updates weight was 165lbs & this months weight is 160lbs (5lbs lost!)
  8. run a 5k in under 45 minutes
  9. grow my hair out - past my shoulders now and looking super cute!
  10. pay off all credit card debit - COMPLETED
  11. pay off at least one of my student loans
  12. finish all of the renovation work on our house so that we can move!
  13. expand my photography skills
  14. stop swearing
  15. keep blogging consistently - I would say that this is going extremely well.
  16. reach 500 followers
  17. get a job I love
  18. be a more positive person
  19. go sky diving 
  20. start a 401k
  21. do something helpful/kind for someone else without them knowing 
  22. donate plasma
  23. volunteer
  24. read and finish six books - One down.
  25. complete a scrap book for my grandparents 50th wedding anniversary 
  26. go to a psychic and have my fortune told - this is planned for NYC in April for Breanna's birthday!!
I think I really need to remember what items are on the list,
then focus on achieving them.  it is really easy to get distracted.
I guess completing 2 items by February isn't so bad.

that shiz is so ratchet

do you guys know what ratchet even means these days?
it is crazy. it means so many different things! it's great.
I prefer definition number four [trusted source]
so, that's what I learned yesterday... 

as I am sure you are aware, it is Tuesday. Ticked Off Tuesday to be exact.
I was extremely excited to see that Andrea also realized that it was Tuesday.
she has written an amazing post on annoying office behavior, check it out!
I guess it is about time that I get down to my writing my own Tuesday post.

here are a couple of things that have been rubbing me the wrong way:

this IS my real hair

  • shoveling, yard work, annoying children doing anything that makes noise at an inappropriate time of morning.  the snow will still be there after nine, and there is no need to dance on the ice [or even speak to one another] in front of my house on your way to the school bus. pipe the fuck down!
  • taking the garbage out. disgusting. I hate touching the can, the bags, anything, its just gross. and in the summer? gag. the smell of hot garbage has to be god torturing us for sure.
  • baking. I think some people have it, and some people don't. I can make a delicious meal with random anything that I find in the kitchen. but I tired to make cupcakes from a box last week and I screwed it up. baking takes far too much precision and patience. I "ain't got time for that".
 
three things.. that is all I have for you.
I'm in a pretty awesome mood this week.

who's that ladyyy



shout out to my brother ryan!
I know you're reading & that you love it.


so this weekend.. not a lot happened really,
but what did happen was very enjoyable.

since I am super short on time this morning,
[I am meeting a friend to do an Account Pretest]
a list of fun things I did is what you'll be getting.

  • I finished almost all of the laundry in the house!  for those of you who are slaves to doing laundry, I know you understand what a real achievement this is. laundry is the worst!
  • I made it to Target at 8AM on Sunday for the unveiling of The Prabal Gurung for Target collection.  since I am broke and Aaron watches my every move I couldn't buy everything that I wanted.  it's totally disappointing because you know I will never get the opportunity to buy these items again.  however, what I did get is totally adorbs.  I die for these sandals, I cannot wait for spring!
  •  I made Aaron and I breakfast! AND it came out amazing.  he is one lucky guy!

Alright, my body is failing apart from all of these workouts,
and I have this dumb ass accounting test, so, I must go.
have a wonderful Monday [as best as you can!] and I'll see you tomorrow,
I don't have much to complain about though..

light up my life

you know what's sad? my life! just kidding. sorta...
my plan is to post highlights from the week [I finally have highlights!]
so I want to do High Five for Friday with Lauren from My Grey Desk.
I have been thinking about my top five things that I will be posting...
but I think you already know about all of them! sad times for my post.
just pretend you don't, it will be more fun for all of us that way!

#1.  Donating Blood
I am a natural giver. I want to donate a kidney to a stranger,
but Aaron won't let me. he is convinced that I might need it.
I am convinced that he thinks HE might need it. not the point.
I have plans to be put on the bone marrow donation registry,
and to donate to whoever I possibly can. I'm not sure, really...
I just feel like if you are able, then you should help, stranger or not.
so I am donating blood today and if you're free then you should too.
talk about preaching huh? I apologize. sometimes I feel strongly.

#2. Working Out
my workouts have been extremely consistent this week. 
I have burned a ton of calories and even when I didn't feel like it,
I still pushed through and sweated out some fat! get it tubs!!
you must try the Nike Training Club App. it will kill you.
I have started one of the 15 minute "Get Focused" workouts,
and 5 minutes in, started screaming "go f#$% yourself!" at the phone.
it has little video clips so you know how to do the moves.
skinny, pretty, bitches. they make it looks so easy. I hate them.
but anyway, its a to die for app. not kidding. get it. right now. go.

#3.  Successful Blogging Week
I have been a consistent blogger this week, and it feels great.
my schedule has been working and my page views are increasing.
traffic is good and I was featured on The Browse on Thursday.
its a great week in my world when I only lose one follower.
when you are as offensive as I am that is quite an achievement.

#4.  Winter Storm Nemo
6-8 or 6-10, if there is anything out there then I will be happy!
it's all up in the air. as we all know, the media hypes this shit up.
it never really snows like it is supposed to [or like I want it to]
and since I am writing this portion on Thursday I don't know the outcome.
I can tell you this much. I am doing a snow dance and enlisting help!

#5.  My Clean House
I cannot remember the last time my house has been this clean.
spring cleaning was taken to the extreme this week. so exciting!
I vacuumed ceilings, walls, blinds, furniture, and obviously, floors.
dusted, pledged, scrubbed, and threw things away. it is so nice.
the house is almost unrecognizable, in the best way imaginable.
also, I remembered something Taylor said awhile ago,
and I have made the bed every day. I hope this is a new habit.

it has been a good week, and I am looking forward to a good weekend.
I have two gym visits planned and unless there really is a blizzard I will be there.
hope you had an excellent week as well, and I hope your weekend is even better.
be lazy, watch hours of television, do homework, blog, and eat some fruit.

skinny bitch

[in my dreams]
it is no secret that I am on a mission to get thin skinny healthy.
I also find this to be a pretty common mission among all of us.
so like I said, I will be posting weekly recipes each Thursday.
however, please keep in mind that I have never done this before.
so without further ado, this weeks recipe:

Chicken Bruschetta Pasta

what is great about this recipe is that you can make just the bruschetta 
and of course it is delicious!! trust me, I wouldn't make it if it weren't, I am a crazy food snob. 
 ingredients:
- 4 large tomatoes
- 2 cloves of garlic
- 4 shallots 
- 3 tbsp fresh basil
- 1/4 tsp kosher salt
- 1/4 tsp pepper
- drizzle of extra virgin olive oil
- 4 tbsp balsamic vinegar
- 2 boneless/skinless chicken breasts
- 1 box of angel hair pasta
bruschetta:
1. wash and dry tomatoes. cut into quarters and remove seeds and juice. 
also discard the stem area from the inside. then chop the tomatoes to a smaller size.
2. dice garlic and shallots.
3. combine tomatoes, garlic, shallots, and oil into bowl and mix.
4. add chopped basil and balsamic vinegar. add salt and pepper to taste.
5. mix thoroughly and set aside.
bruschetta chicken pasta:
1. cook chicken (using whatever method you prefer. I cooked mine in a pan on the stove top)
2. boil pasta
3. mix pasta with bruschetta mixture
4. when chicken is finished cooking, let rest for 5 minutes under aluminum foil
5. after letting chicken rest, slice serve on top of past
6. eat!
and there you have it! 
a delicious meal that won't make you fat!
